Nothing accidentally vegan about this menu

We had the pleasure of a recent trip to Glasgow as a surprise for my parents who were celebrating their 50th wedding anniversary. As part of the trip we had arranged a mystery lunch for them. They didn't know where lunch was (until they arrived in the chauffeur driven limo we had hired) and they didn't know 3 of us (Sara, Becka and myself) would be waiting for them.

Lunch was at a fairly traditional establishment overlooking a very grand 5-star arena that is normally full with close to 50,000 people cheering on their favourite football team. I'll admit my allegiance is to the blue side of Glasgow.

Restaurants at football stadiums - like most high street restaurants - aren't to my best knowledge renowned for catering for vegans. The prior arrangements had included communication with the restaurant folk about providing some vegan options as part of the lunch. Something they were very happy to do.

The menu they prepared blew us away. And we thought it was worth sharing with you.

The young Executive Chef made a point of coming out from kitchen to tell us about the menu. What was really pleasing was the evident thought, research and detail that had gone into preparing this 3 course vegan lunch. The vanilla meringue (made from chickpea water and sugar) was something they were particularly proud of.

All in all what you might call a premier league vegan lunch !
