Chickpea 'tuna'
This is one of my lunchtime faves at the moment. A good way as well of showing how versatile the humble chickpea can be. And of course 100% vegan. Chickpea 'tuna' (serves 2) ingredients: 1 can Suma Organic Chickpeas 1tbsp Geo Organic Vegan Mayonnaise Salt + Pepper optional: 1tsp Biona Organic Mustard 1/2 can Suma Organic Sweetcorn Method: 1.
